Tirana's Fergese

This is a traditional dish of the Albanian's capital Tirana.

Tirana's Fergese
Ingredients for 4-5 people

8-10 average-sized peppers (not hot peppers)
4-5 average-sized tomatoes
2 cups of fat, or equivalent butter for frying
1 dinner spoon of flour
2 eggs
2 small garlic cloves
4-5 dinner spoons of cottage cheese
Hot red pepper flakes (optional, or to your taste)
Parsley sprigs

Clean the normal peppers, removing the tails and the seeds; wash them, and then fry them in some of the butter. In the remaining butter put the skinned tomatoes, cut in small pieces, and the flour. Fry them until the mixture is thickened. Then set it aside from the stove and put in the eggs (not the shells, of course), parsley, and cottage cheese (add hot pepper flakes to your taste). Put the mixture in the plate and put the fried peppers over the mixture.

(Editor's Note: Uncooked eggs are a source of salmonella. Although the heat from the hot mixture should "shirr" the eggs when they are placed into it, some rawness might remain. So, it is recommended to reheat the mixture for a few moments to make sure the eggs are cooked thoroughly.)
